Crock Pot Chicken Parmesan for Two

Today I'm finally sharing the recipe that I mentioned back in my April Goals post. It was my goal to test out a new recipe and share it in a post here on the blog, so here I am finally fulfilling that goal, even though I've had the recipe typed out and my pictures taken since the beginning of April. 🙈

I love using my crock-pot year 'round, but especially these super busy times of the year like when school is almost over so I'm spending extra hours making final exams, grading papers, cleaning my classroom, etc. 

This chicken parmesan recipe is super easy and one of my favorite comfort foods. I made my own recipe out of several different versions that I've tried over the years + what I had on hand to use up. 

If you're interested; this is the crock-pot that I use. It's the perfect size for cooking so many different things for two people, or for cooking family sized amounts of side dishes or appetizers.
It's my go-to crockpot for dips or for making crockpot green beans in for family occasions or work parties!

Ingredients: 

2 Chicken breasts (I used 6 chicken tenderloins because it's what I had on hand)
1 (28 oz) can of diced tomatoes
1/2 purple onion (white would work fine as well)
A dash  of garlic & onion powders
1 Tablespoon dried basil
1 Teaspoon crushed red pepper flakes
1 Tablespoon Italian seasoning (oregano & parsley blend)
A generous sprinkling of mozzarella cheese for melting

No one has ever accused me of being a food photographer (& I forgot to melt the cheese on top of mine 🙊)
